Apple Dumplings (Easy & Delicious)

One of my coworkers gave me this great recipe to try right before I got the sugars that I've been dying to try. Who would have thought that sprite, apples and crescent rolls would go together, but apparently they are the bomb and a popular desert in Cali. If anyone has a chance try it out and let me know how it is:
4 Granny Smith apples
2 cans Pillsbury Crescent Rolls
1 stick real butter
1 cup sugar (or Splenda can be used)
1 heaping teaspoon cinnamon (or a little more...)
20 oz. of Sprite...yes, Sprite (Or diet Sprite)
*Peel, core and quarter the apples. Lay 1 quarter apple on each crescent roll. Roll the dough around the apple pieces. Arrange rolls together in a 9"x13" pan. Melt butter. Mix in sugar and cinnamon. Spoon over the top of the rolls then pour Sprite around the rolls. Bake at 350 degrees for 50 minutes. Let pan sit to cool and soak up the yummy liquid!

You've Got the Sugar

Was Mark’s response after I found out I have been diagnosed with gestational diabetes. After research, I’ve found out that it’s fairly common and can be treated with a strict diet and exercise. Mainly no carbs, tons of protein, 6 meals a day, portion control and glucose monitoring four times a day with my handy new diabetes tester. Carbs are my favorite, and I will miss my pancakes, cupcakes, baked potatoes, pineapple, bread, and pasta dearly. However, Baby T will be here soon and he or she is definitely worth it!

Obesity: The scourge of society

Well, as everyone with a TV knows, being overweight is not healthy for you. I have never taken much notice due to my girlish figure and string bean legs, but you never really notice something until it affects you personally. I got off before 5 for the first time in a long time Friday so I decided to surprise Amy and pick up ingredients for green tomatillo enchiladas at our local Kroger. As the overweight clerk with the large pannus was weighing my tomatillos, I noticed a good bump of a pound over what I had measured in the produce section. I also noticed an exposed roll touching the scale where she was weighing my purchase. I kindly remarked that I thought her "arm" was on the scale. This was followed by a dirty look and her standing back while weighing my stuff which was the 1.5 pounds I thought, and not the 2.5 initially measured. I'm sure I could eventually come up with something witty here, but what do you really say to that? Get it together America. In other news, the Horns are off to their usual slow start. Let's hope for parleys sake that they pick it up and score 40 unanswered in the second half.

The Big 29

Today is Mark's b.d.! Another great year down and a new one to get excited about-especially with it being the last one in his 20s and all the great things to come. Since most of our new friends are in the medical field their schedules were booked tonight with calls at the hospitals so we decided to head to Bistro 409 for a late and quiet dinner. The food was great and best of all Mark got to relax and we got to spend time together. Happy Birthday Marcus, we all love you and are so proud of you!

Running Joke

My office is located on the 7th & 8th floor of a bank building. Today as I was riding the elevator I overheard ladies discussing how upset their husbands were that their friends were having weddings in April. I continued to listen to the women vent: Both had weddings scheduled the first weekend of April which was unacceptable because they or their husband went to UNC, Duke or Kentucky and that was Final Four time. Then one of their coworkers had scheduled their wedding the weekend before the Masters and you apparently just don't do that in Augusta.
I was cracking up because I never thought of scheduling weddings around the Final Four or Masters. In Texas we schedule events around football...in fact the running joke in the Ehlert fam is that Mark and I were not looking at the calendar when we were in Spain. Even though we are due on December 30th my fam is convinced Baby T will arrive on January 7th (the day Texas will play in the National Championship.) Here's to hoping the baby comes before the 7th so no one has to look for red eye flights after the game:)

Save The Ta Tas

The fountain in downtown Augusta that will be pink all month supporting breast cancer awareness. The Augusta Chronicle newspaper is also pink this month and Mark tells me the NFL players will be sporting some pink pads and cleats this month!
October is Breast Cancer Awareness Month and what a great cause to get your tatas behind. I was so overwhelmed this morning to see such support from the local community for Breast Cancer Awareness. The disease has effected so many of my close friends and their relatives that every time this year it really hits home how important it is to raise awareness, do self breast exams/mammograms and volunteer in anyway possible to help raise funds to find a cure. Tomorrow is get pink at work in support for this great cause and I can't wait to get all decked out!
